ST16RE soft serve machine

How to Install and Set Up a Commercial Soft Serve Machine

LiLiang

Just received your GSEICE ST16RE and not sure what to do first? Don't worry. You do not need to be an experienced ice cream shop operator to get started. The easiest way is to follow the setup in order and avoid changing settings before you know what they do.

This guide walks through the first setup, from placing the machine on the counter to making your first serving.

1. Put the ST16RE in the Right Place

Before you plug anything in, choose where the machine will stay.

The ST16RE has a compact countertop design and a 6L stainless steel hopper, but it still needs enough space around the machine for normal operation and ventilation.

Do this first:

  • Place the machine on a flat, solid counter.
  • Make sure it does not wobble.
  • Keep the ventilation area clear.
  • Do not push the machine tightly against another appliance.
  • Make sure the power supply matches the rating on the machine.

Do not add ice cream mix yet. There are a few things to check first.

2. Install the Mixer and Dispensing Parts

After unpacking the machine, install the parts that come into contact with the mix.

The ST16RE has dedicated instructions for the mixer, dispensing handle, and related assembly. GSEICE also provides an ST16RE mixer adjustment and ice cream making tutorial.

If you are doing this for the first time, follow this order:

  • Find the mixer and dispensing components.
  • Install the mixer according to the supplied instructions.
  • Install the required sealing parts.
  • Install the dispensing handle.
  • Check that everything is seated correctly.

Do not force a part into place. If something does not fit, stop and check the assembly instructions rather than turning on the machine.

3. Clean the Machine Before Making Your First Batch

Even though the machine is new, clean the food-contact system before making your first serving.

This is simple with the ST16RE's one-touch cleaning function.

What to do

  1. Make sure the machine is assembled correctly.
  2. Pour clean water into the hopper.
  3. Turn on the machine.
  4. Select the CLEAN function.
  5. Allow the cleaning cycle to run.
  6. Place a suitable container under the dispensing outlet.
  7. Drain the water through the outlet.

GSEICE specifically describes the cleaning process as adding water to the hopper and using the cleaning button to clean the machine.

Once the cleaning water has been drained, the machine is ready for mix preparation.

4. Prepare the Ice Cream Mix

This is one step you should not guess.

For the ST16RE, GSEICE recommends a 1:2.5 water-to-ice-cream-powder ratio and recommends using ice cream powder rather than milk paste for the specified setup.

For example:

  • 1 kg water
  • 2.5 kg ice cream powder

Mix the water and powder thoroughly before putting the mixture into the machine.

Do not randomly add extra powder because you want harder ice cream. Do not randomly add extra water because the mixture looks thick. If you change the ratio, you can also change how the mixture freezes and dispenses.

If your powder manufacturer provides different preparation instructions, follow the instructions applicable to the product you are actually using while keeping the machine's recommended ratio in mind.

5. Add the Mix to the Hopper

Now you can add the prepared mixture.

The ST16RE has a 6L stainless steel hopper with a sloped bottom designed to help use the mix efficiently.

Before pouring:

  • Make sure the hopper is clean.
  • Make sure the dispensing components are installed.
  • Make sure the mixture is fully mixed.

Then pour the prepared mix into the hopper.

Do not pour an unprepared powder-and-water mixture into the machine and expect the machine to mix it for you. Prepare the mixture first.

6. Press AUTO to Start Making Ice Cream

Now comes the part most first-time users are waiting for.

If your goal is to make soft serve, select the normal automatic production function on the ST16RE control screen.

The ST16RE uses a 5-inch waterproof LED screen that allows operators to view and control operating information such as temperature and hardness.

Once the machine starts:

Leave it alone and let it work.

Do not keep pressing different buttons because you are waiting for the first batch.

Do not immediately change the hardness setting.

Give the machine time to freeze and mix the product.

7. Test the First Serving

When the machine indicates that the product is ready, test a small serving before serving customers.

Put a cup under the outlet and open the dispensing handle.

Now look at the ice cream.

If it looks right

If the ice cream comes out smoothly and holds its shape, you can start serving.

If it is too soft

Do not immediately change the setting to the highest hardness level.

Make a small hardness adjustment and test another serving.

If it is too hard

Lower the hardness setting gradually and test again.

GSEICE provides a specific ST16E/ST16RE soft-and-hard adjustment tutorial, so operators can make adjustments without guessing what the control is intended to do.

The simple rule is:

Change one setting at a time, then test the product again.

8. What Is the Fresh-Keeping Function?

This is another setting that can confuse first-time users.

The ST16RE includes pre-cooling and fresh-keeping for the hopper. The function is designed to keep the mix chilled during periods when you are not actively dispensing product.

In simple terms:

Making ice cream? Use the normal production function.

Taking a break from serving? The fresh-keeping function can be used according to the machine instructions.

Finished for the day? Follow your cleaning and food-safety procedure rather than assuming fresh-keeping replaces cleaning.

GSEICE also provides a dedicated ST16RE tutorial covering the refrigeration and defrost functions.

9. If Ice Cream Will Not Come Out, Check These Things First

If you pull the handle and nothing comes out, do not immediately assume the machine is broken.

Check the simple things first.

The product is too hard

The freezing setting may need adjustment. Reduce the hardness gradually and test again.

The cylinder is frozen too hard

GSEICE provides a specific troubleshooting guide for an ST16RE cylinder freezing issue where ice cream cannot be dispensed.

The mixer or handle was installed incorrectly

Turn the machine off before checking internal components. Recheck the assembly according to the supplied instructions.

The machine is showing an alarm

Do not keep pressing buttons at random. Check the specific warning and use the applicable ST16RE troubleshooting guide. GSEICE provides separate resources for UH and LL warnings as well as other ST16RE issues.

10. Clean the Machine After Use

Once you finish serving, cleaning is part of the normal operating routine.

The ST16RE includes one-touch cleaning and one-touch defrost functions.

For the cleaning cycle, use clean water and the machine's cleaning function as instructed. Drain the water through the dispensing outlet and follow the cleaning instructions for the food-contact components.

Do not treat cleaning as something you only do when the machine looks dirty. Regular cleaning is part of operating food equipment safely.

Conclusion

Setting up the GSEICE ST16RE is much easier when you follow the same order every time: assemble the machine, clean it, prepare the mix correctly, add the mix, start the production cycle, test the first serving, and only then adjust the hardness if necessary.

You do not need to understand every technical part inside the machine to use it. Start with the basic settings, make one adjustment at a time, and pay attention to what comes out of the dispensing outlet.

For new operators, the most important things to remember are simple: use the recommended 1:2.5 water-to-powder ratio, do not randomly change settings, and use the ST16RE's cleaning, fresh-keeping, and defrost functions according to their intended purpose. With that routine, the first setup becomes much less intimidating—and daily operation becomes much easier.
